Make a quick stew!

I used a heavy chicken stock.

Added more cabbage because it is so good for you and brussels sprouts cause I love them.

Diced up the beef and veggies and simmered for half of an hour.

Do not add salt since the corned beef is salty.

Enjoy!

  1. What left over corned beef? :) This looks good! Will try if we ever do end up with any leftovers from St. Paddy’s day! For the original dinner we simmer our CB and veggies in beer instead of water for a few hrs. Yum…Everything tastes better with beer but you don’t actually taste the beer…just adds another nice level of flavor! :)
