What to do with all of that left over Corned Beef from St. Patty’s Day?
Make a quick stew!
I used a heavy chicken stock.
Added more cabbage because it is so good for you and brussels sprouts cause I love them.
Diced up the beef and veggies and simmered for half of an hour.
Do not add salt since the corned beef is salty.
Enjoy!

What left over corned beef?
This looks good! Will try if we ever do end up with any leftovers from St. Paddy’s day! For the original dinner we simmer our CB and veggies in beer instead of water for a few hrs. Yum…Everything tastes better with beer but you don’t actually taste the beer…just adds another nice level of flavor!
Where do you find or how do you make your corned beef?
The recipe is on my blog from last year. I corn my own beef but it is usually in the grocery store around this time of the year. Whole Foods was curing thier own corned beef this year too.

You can also buy a nice corned beef at whole foods. Kinda expensive but so yummy. It did not have the chemical taste of regular grocery store corned beef.

What a great recipe to use left over corn beef. This is home made comfort food and a good meal on any day. I like the adding of a lot of vegetables.
I know it is simple but really good way to use up the extra corned beef.
